Pepperoni-tortellini Soup Recipe

Ingredients
  • 1 oz pepperoni slices, halved .
  • 1 c uncooked cheese tortellini (frozen works best) .
  • 1 tsp dried basil leaves .
  • 2 tbsps grated parmesan cheese .
  • 1 (14 1/2 oz) can whole tomatoes, undrained, cut up .
  • 2 (14 1/2 oz) cans chicken broth .
  • 1 minced garlic clove

Directions
  • Step #1 In a large, mix tortellini, saucepan, garlic & chicken broth; bring to a boil.
  • Step #2 Reduce heat, simmer until tortellini is of desired doneness, approximately 15 mins.
  • Step #3 Stir in remaining ingredients except Parmesan cheese.
  • Step #4 Simmer an extra 5 mins.
  • Step #5 Ladle soup into serving bowls.
  • Step #6 Top each bowl with Parmesan cheese.
