Cheese Manicotti With Spinach Recipe

Ingredients
  • 1/4 c parsley, sliced .
  • 2 c ricotta cheese .
  • parsley sprigs .
  • 1/4 tsp salt .
  • 3 oz cream cheese, softened .
  • 1 egg, slightly beaten .
  • 1/4 c parmesan cheese .
  • 1 (10 oz) package frozen sliced spinach .
  • 1/2 c parmesan cheese, grated .
  • 2 c marinara sauce .
  • 2 green onions, sliced .
  • 8 manicotti, uncooked

Directions
  • Step #1 Cook manicotti shells in boiling, salted water until barely tender (package directions).
  • Step #2 Rinse with cold water.
  • Step #3 Drain.
  • Step #4 Combine cheeses, egg, parsley, onion & salt; mixing well.
  • Step #5 Fill shells with cheese mixture.
  • Step #6 Arrange in lightly oiled baking dish.
  • Step #7 Cover up with marinara sauce.
  • Step #8 Sprinkle top with extra 1/4 c Parmesan.
  • Step #9 Bake at 350 degrees for 25 - 30 mins.
  • Step #10 Meanwhile, cook spinach according to package directions.
  • Step #11 DRAIN WELL.
  • Step #12 Spoon down center of baked manicotti just before serving.
  • Step #13 Garnish with parsley.
