Tortellini Salad Recipe

Ingredients
  • 5 c sliced arugula .
  • 2 garlic cloves, minced .
  • 4 oz sun-dried tomatoes, finely sliced .
  • 1/2 tsp fresh ground black pepper .
  • 1/4-1/2 c extra virgin olive oil .
  • 8 oz tortellini .
  • 3 oz prosciutto, sliced .
  • 1/4 tsp salt .
  • 1/2 c thinly sliced onions .
  • 1/3 c asiago cheese or parmigiano or romano cheese, freshly grated

Directions
  • Step #1 Cook tortellini according to package directions to al dente.
  • Step #2 Drain & allow this to cool, but do not run under water.
  • Step #3 (Mix in a little olive oil to prevent sticking & drying.
  • Step #4 ) Meanwhile, marinate the sundried tomatoes & garlic in extra virgin olive oil.
  • Step #5 When tortellini have cooled enough to handle, onion, add the arugula, prosciutto, asiago cheese & the sundried tomato/garlic/olive oil mixture, mixing well & adding salt & freshly ground pepper to taste.
  • Step #6 Allow to sit, covered & chilled for about an hr so flavors can mix.
