Ginger, Green Apple, Sweet Onion And Coconut Salad Recipe

Ingredients
  • salt & freshly ground black pepper .
  • 1 pinch salt .
  • 1 piece ginger, about 3 inches, peeled & cut into 1/8-by-2-inch matchsticks .
  • 2 tbsps basil, finely shredded .
  • 2 granny smith apples, quartered lengthwise, cored & thinly sliced crosswise (about 1 lb) .
  • Lemon Verbena Oil .
  • 1 c lemon verbena leaves, tender inner white bulbs only, crushed (about 3 oz) or 2 stalks fresh lemongrass, tender inner white bulbs only, crushed .
  • 3 tbsps fresh lemon juice .
  • 1/2 c fresh coconut, finely grated (I used frozen) .
  • 1/2 c grapeseed oil .
  • 1 small sweet onion, such as Vidalia, quartered lengthwise & thinly sliced crosswise

Directions
  • Step #1 In a mixer, mix the lemon verbena with the oil & mix for 2 mins.
  • Step #2 Pour the oil into a jar & let this stand for 1 hr, then strain, pressing on the solids to extract as much oil as possible.
  • Step #3 Spice up with the salt.
  • Step #4 Toss the apples with the onion, coconut, ginger, lemon juice & basil.
  • Step #5 Spice up with salt & pepper.
  • Step #6 Add 3 tbsps of Lemon Verbena Oil & toss; serve.
