One-pan Chicken Parmigiana Recipe

Ingredients
  • 3/4 c mozzarella cheese, shredded .
  • cooking spray .
  • 1 c tomato sauce, bottled, any flavor .
  • 2 tbsps cornmeal .
  • 2/3 c breadcrumbs, seasoned .
  • 4 boneless skinless chicken breasts

Directions
  • Step #1 Preheat oven to 375.
  • Step #2 Pound chicken breasts to 1/4 inch thickness.
  • Step #3 Mix breadcrumbs & cornmeal (cornmeal adds a nice texture) & press chicken in crumbs, evenly coating both sides.
  • Step #4 Line baking dish with aluminum foil wrap & lightly spray with cooking spray.
  • Step #5 Bake chicken for 30 mins.
  • Step #6 Remove from oven & spoon sauce over the meat, using as much or as little as you like.
  • Step #7 Sprinkle top with cheese.
  • Step #8 Cover up with aluminum foil wrap & bake another 10-15 mins, until cheese melts.
