Ingredients
2 quarts water, salted .
1 lb French style green beans, trimmed (thin) .
1 tbsp fresh mint, sliced .
1 pint cherry tomatoes, halved (optional) .
1 c kalamata olives, pitted, herbed (optional) .
salt & pepper .
1 garlic clove, peeled & minced .
1/2 c fresh parsley, sliced (flat-leaf) .
1 tbsp Dijon mustard .
1 tbsp balsamic vinegar .
2 lbs baby new potatoes, assorted, such as Peruvian blue, fingerling, red bliss (about 25-30) .
1 tbsp extra-virgin olive oil .
olive oil flavored cooking spray
Directions
Step #1 In large saucepan bring salted water to a boil.
Step #2 Add potatoes & cook this until just soft, about 3-5 mins.
Step #3 Drain in colander & let dry on paper towels.
Step #4 While potatoes are boiling bring a small pot of water to a boil.
Step #5 Cook beans until just done but still crisp, about 4-5 mins.
Step #6 Drain as soon as possible & rinse in cold water.
Step #7 Set aside.
Step #8 Light an outdoor grill or a stovetop grill pan.
Step #9 Cut cooked potatoes in half or, if tiny, leave whole.
Step #10 Spray cut side with olive oil & grill cut side down until marks appear.
Step #11 Meanwhile, vinegar, mustard, prepare dressing by mixing garlic, parsley & mint in a small bowl.
Step #12 Slowly whisk in olive oil.
Step #13 When potatoes are grilled but still hot, toss in dressing & season to taste with salt & pepper.
Step #14 Add green beans & olives & tomatoes, if desired, & mix well.
Step #15 Serve at about room temp.
