Peppermint Marshmallow Ice Cream Pie Recipe

Ingredients
  • 5 hard peppermint candies, crushed .
  • 15 hard peppermint candies, crushed .
  • 20 chocolate wafer cookies, coarsely crushed .
  • 1 1/4 c mini marshmallows, divided .
  • 8 chocolate wafers .
  • 4 c low-fat vanilla ice cream, softened & divided

Directions
  • Step #1 Place 2 tbsp vanilla ice cream in small microwave bowl.
  • Step #2 Microwave on high for 20 seconds till ice cream melts.
  • Step #3 Spread melted ice cream in the bottom of 9" pie plate.
  • Step #4 Arrange half of crushed chocolate wafer cookies in bottom of pie plate.
  • Step #5 Place remaining soft ice cream, 1 c marshmallows, & 15 crushed candies in large bowl, beat with mixer at medium speed till mixd.
  • Step #6 spoon half the mixture evenly into crust, & sprinkle evenly with remaining crushed cookies.
  • Step #7 Arrange whole cookies around the outside edge of pie; sprinkle top of pie with remaining 1/4 c marshmallows & 5 crushed candies.
  • Step #8 Cover up & freeze 4 hrs till firm.
