Classic Fried Catfish With Jalapeño Hush Puppies Recipe

Ingredients
  • 1 large egg, beaten .
  • 1/4 tsp garlic powder .
  • cooking oil .
  • vegetable oil .
  • 1/2 c minced onions .
  • 1 c milk .
  • 2 tsps salt .
  • 4 (6 oz) catfish fillets .
  • Jalapeno Hush Puppies .
  • 3/4 c yellow cornmeal .
  • 1/4 c all-purpose flour .
  • 1/2 c self-rising flour .
  • 1 tsp cayenne pepper .
  • 1 c self-rising cornmeal (or add 2 tsps baking powder & 2 tsps salt to 1 c of cornmeal) .
  • 1 tbsp granulated sugar .
  • Classic Fried Catfish .
  • 1 tbsp minced jalapeno peppers

Directions
  • Step #1 For the catfish, flour, mix cornmeal, salt, cayenne pepper & garlic powder.
  • Step #2 Coat catfish with mixture, shaking off excess.
  • Step #3 Fill large, heavy skillet half full with vegetable oil- Heat to 350ºF.
  • Step #4 Add catfish in single layer, about 5 to 6 mins, & fry until golden brown, depending on size.
  • Step #5 Remove & drain on paper towels.
  • Step #6 Serves four.
  • Step #7 For the hush puppies, mix first five ingredients in bowl.
  • Step #8 Stir in milk & egg until mixd.
  • Step #9 Preheat cooking oil to 350ºF in heavy skillet or deep fryer.
  • Step #10 Drop level tbsps of batter into hot oil.
  • Step #11 Turning hush puppies frequently, cook this until golden brown on every side, about 3 mins.
  • Step #12 Remove with slotted spoon.
  • Step #13 Drain on paper towels.
  • Step #14 Yields 2 dozen.
