Chimichangas Recipe

Ingredients
  • 1/2 tsp cumin .
  • 8 (8 inch) tortillas .
  • 1 medium onion, sliced .
  • 1 tsp chili powder .
  • sliced green onions .
  • 1 garlic clove, minced .
  • 10 oz tomato soup .
  • shredded lettuce .
  • oil .
  • 1 c shredded cheese .
  • 1 lb ground turkey .
  • 4 oz sliced green chilies, drained .
  • 1 tsp dried oregano .
  • 1 tbsp vinegar

Directions
  • Step #1 in 10" skillet over med-heat/flame, cook ground turkey, onion & garlic until browned.
  • Step #2 ocasacionally stirring to break up meat.
  • Step #3 drain well.
  • Step #4 stir in the tomato soup, vinegar, green chilies, oregano & cumin.
  • Step #5 reduce heat.
  • Step #6 simmer for 10-15 mins or until most of the liquid has evaporated.
  • Step #7 remove this from heat.
  • Step #8 cool slightly.
  • Step #9 spoon 1/4 c of meat mixture down middle of each tortilla.
  • Step #10 sprinkle cheese over top of filling.
  • Step #11 roll up tortilla.
  • Step #12 secure with toothpicks.
  • Step #13 in 10" skillet, heat 1" of oil to 350*.
  • Step #14 fry chimichangas for 2 mins.
  • Step #15 or until golden, turning once.
  • Step #16 remove & drain on paper towels.
  • Step #17 garnish with lettuce, & green onion.
  • Step #18 sour cream optional -- NOTE:.
  • Step #19 I substitute rice vinegar for vinegar.
