Chicharron Con Huevo (eggs With Pork Rind) Recipe

Ingredients
  • 100 g pork rinds, in small pieces (chicharron) .
  • sliced pickled jalapeno peppers (to taste) .
  • 1 link chorizo sausages, crumbled (about 1/3 c) .
  • 1/4-1/3 c sliced onions .
  • 1-2 tbsp cooking oil .
  • salt, to taste .
  • 1 c hot water .
  • 4 eggs .
  • 2 tbsps finely sliced cilantro

Directions
  • Step #1 Sautee onion in hot cooking oil until it is light brown.
  • Step #2 Add the crumbled chorizo & stir fry till chorizo is cooked.
  • Step #3 Add the pieces of the crackly pork rind (chicharron) & the rest of the ingredients.
  • Step #4 simmering until the pork rind is soft.
  • Step #5 Beat eggs slightly & add to the above preparation, mixing well, cooking to the scrambled eggs stage.
