Chicharron Con Huevo (eggs With Pork Rind) Recipe

Ingredients

100 g pork rinds, in small pieces (chicharron) .
sliced pickled jalapeno peppers (to taste) .
1 link chorizo sausages, crumbled (about 1/3 c) .
1/4-1/3 c sliced onions .
1-2 tbsp cooking oil .
salt, to taste .
1 c hot water .
4 eggs .
2 tbsps finely sliced cilantro

Directions

Step #1 Sautee onion in hot cooking oil until it is light brown.
Step #2 Add the crumbled chorizo & stir fry till chorizo is cooked.
Step #3 Add the pieces of the crackly pork rind (chicharron) & the rest of the ingredients.
Step #4 simmering until the pork rind is soft.
Step #5 Beat eggs slightly & add to the above preparation, mixing well, cooking to the scrambled eggs stage.
