Chicken Marinated In Sour Cream
Ingredients
80 ml rice wine vinegar .
2 tsps cracked black pepper .
salt .
1 tbsp ground coriander .
200 ml white wine .
Marinade .
150 ml fish sauce or soy sauce .
2 tbsps yellow mustard seeds .
3 kg fish, scaled & cleaned (red emporer) .
1 onion, peeled & sliced .
600 ml mirin .
1 tbsp paprika .
4 garlic cloves, peeled & sliced .
4 chilies, sliced
Directions
Step #1 Slash fish diagonally 4-5 times to the bone.
Step #2 Rub whole fish with salt & put into a deep dish.
Step #3 Mix all marinade ingredients together & pour over the fish.
Step #4 Cover up & put in the fridge for 4 hrs turning over after 2 hrs.
Step #5 Preheat oven to 180 degrees Celsius.
Step #6 Stuff belly of fish with large balls of aluminium foil wrap to retain its shape & also allow you to stand it upright in a baking pan.
Step #7 Bake in preheated oven for 30-40 mins until cooked to your liking & flesh is opaque & flakes easily.
