Baked Red Emporer Marinated In Mirin Recipe

Ingredients
  • 80 ml rice wine vinegar .
  • 2 tsps cracked black pepper .
  • salt .
  • 1 tbsp ground coriander .
  • 200 ml white wine .
  • Marinade .
  • 150 ml fish sauce or soy sauce .
  • 2 tbsps yellow mustard seeds .
  • 3 kg fish, scaled & cleaned (red emporer) .
  • 1 onion, peeled & sliced .
  • 600 ml mirin .
  • 1 tbsp paprika .
  • 4 garlic cloves, peeled & sliced .
  • 4 chilies, sliced

Directions
  • Step #1 Slash fish diagonally 4-5 times to the bone.
  • Step #2 Rub whole fish with salt & put into a deep dish.
  • Step #3 Mix all marinade ingredients together & pour over the fish.
  • Step #4 Cover up & put in the fridge for 4 hrs turning over after 2 hrs.
  • Step #5 Preheat oven to 180 degrees Celsius.
  • Step #6 Stuff belly of fish with large balls of aluminium foil wrap to retain its shape & also allow you to stand it upright in a baking pan.
  • Step #7 Bake in preheated oven for 30-40 mins until cooked to your liking & flesh is opaque & flakes easily.
