Mama's Turkey Marsala (or Chicken) Recipe

Ingredients
  • 1 tbsp lemon juice .
  • 1/4 c sherry wine .
  • 1/4 c flour .
  • 1 lb turkey breast, sliced or lbed thinly .
  • 2 tbsps olive oil .
  • 1 c marsala wine .
  • 1/2 tsp oregano (Turkish or European is best) .
  • 1/4 tsp pepper .
  • 1/4 tsp onion powder .
  • 2 garlic cloves, thinly sliced (or minced) .
  • 1/2 tsp salt .
  • 1/2 c chicken broth

Directions
  • Step #1 Mix flour, Onion Powder, Salt & Pepper in dredging dish.
  • Step #2 Dredge turkey slices & using a skillet brown in hot olive oil approximately 2 mins each side.
  • Step #3 Remove turkey & set aside.
  • Step #4 Using same skillet, saute mushrooms in remaining oil for 3-4 mins.
  • Step #5 (Do not remove).
  • Step #6 Gently deglaze skillet by adding the Marsala Wine.
  • Step #7 Add remaining 5 ingredients & cook on medium-low for 10 mins reducing liquid by one-half.
  • Step #8 In separate skillet, arrange turkey slices & carefully pour the sauce over turkey.
  • Step #9 Bring to a simmer, COVER & cook for 15 mins.
  • Step #10 Sauce should thicken to coat pasta nicely.
  • Step #11 If you prefer thicker, mix 1 Tbl.
  • Step #12 cornstarch with a little cold water & add to sauce & let simmer for 2-3 mins.
  • Step #13 Serve with angel hair, linguini, or fettucini pasta.
