Cornmeal Mini Loaves Recipe

Ingredients
  • 2 (.25 oz) packages active dry yeast
  • 2 eggs
  • 1/2 c shortening
  • 1/2 c sugar
  • extra cornmeal
  • 6 c all-purpose flour
  • 1 c warm milk (110 to 115 degrees F)
  • 1 c cornmeal
  • 2 tsps salt
  • 1 c warm water (110 degrees to 115 degrees)

Directions
  • Step #1 In a mixing bowl, dissolve yeast in warm water.
  • Step #2 Add the milk, sugar, salt, eggs, shortening, cornmeal & 4 c flour.
  • Step #3 Beat until smooth.
  • Step #4 Stir in enough remaining flour to form a soft dough.
  • Step #5 Turn onto a floured surface; knead until smooth & elastic, about 6-8 mins.
  • Step #6 Place in a greased bowl, turning once to grease top.
  • Step #7 Cover & let rise in a warm place until doubled, about 1 hr.
  • Step #8 Punch dough down.
  • Step #9 Turn onto a lightly floured surface; divide into size pieces.
  • Step #10 Shape each into 6-in.
  • Step #11 oval loaf.
  • Step #12 Grease two baking sheets; sprinkle with cornmeal.
  • Step #13 Place three loaves 3 in.
  • Step #14 apart on each prepared pan.
  • Step #15 Cover & let rise until doubled, about 30 mins.
  • Step #16 With a sharp knife, make three shallow diagonal slashes across the top of each loaf.
  • Step #17 Bake at 400F degrees F for 15-20 mins or until golden brown.
  • Step #18 Remove from pans to wire racks to cool.
