Ingredients
2 (.25 oz) packages active dry yeast
2 eggs
1/2 c shortening
1/2 c sugar
extra cornmeal
6 c all-purpose flour
1 c warm milk (110 to 115 degrees F)
1 c cornmeal
2 tsps salt
1 c warm water (110 degrees to 115 degrees)
Directions
Step #1 In a mixing bowl, dissolve yeast in warm water.
Step #2 Add the milk, sugar, salt, eggs, shortening, cornmeal & 4 c flour.
Step #3 Beat until smooth.
Step #4 Stir in enough remaining flour to form a soft dough.
Step #5 Turn onto a floured surface; knead until smooth & elastic, about 6-8 mins.
Step #6 Place in a greased bowl, turning once to grease top.
Step #7 Cover & let rise in a warm place until doubled, about 1 hr.
Step #8 Punch dough down.
Step #9 Turn onto a lightly floured surface; divide into size pieces.
Step #10 Shape each into 6-in.
Step #11 oval loaf.
Step #12 Grease two baking sheets; sprinkle with cornmeal.
Step #13 Place three loaves 3 in.
Step #14 apart on each prepared pan.
Step #15 Cover & let rise until doubled, about 30 mins.
Step #16 With a sharp knife, make three shallow diagonal slashes across the top of each loaf.
Step #17 Bake at 400F degrees F for 15-20 mins or until golden brown.
Step #18 Remove from pans to wire racks to cool.
