Diabetic Pear Strudel Recipe

Ingredients
  • 1/2 tsp sugar (2.5 ml) .
  • 1 1/2 lbs pears (Bartlett or D'anjou, 720g) .
  • 2 tbsps one-to-one sugar substitute (I used Splenda, 30 g) .
  • 2 tsps fresh lemon juice (10 ml) .
  • 1 sheet frozen puff pastry, thawed .
  • 1/2 tsp cinnamon (2.5 ml) .
  • 2 tbsps slivered almonds, toasted (30 g) .
  • 1 tsp grated lemon zest (5 ml)

Directions
  • Step #1 Preheat oven to 425F (220C)Gas Mark 7.
  • Step #2 Use nonstick cookie sheet, spray lightly or cover with parchment paper.
  • Step #3 Peel, core & thinly slice pears.
  • Step #4 Lightly coat a nonstick pan with butter flavored cooking spray.
  • Step #5 (I just used butter).
  • Step #6 Add the pears & saute for 2 mins.
  • Step #7 Stir in the zest, juice & sugar substitute.
  • Step #8 Cook until the pears are just cooked through.
  • Step #9 Set aside.
  • Step #10 On a floured surface, roll the puff pastry to make a 12 1/2 X 10 1/2 (31.

  • Step #12 25) inch rectangle.
  • Step #13 Sprinkle top almonds on the pastry.
  • Step #14 Drain pears & place down middle third (long way) of the puff pastry to within 1/2 inch (1.

  • Step #16 Spray the edges of the pastry & fold each 1/3 side over fruit.
  • Step #17 I brushed on butter.
  • Step #18 Place seam side down on cookie sheet.
  • Step #19 Make slashes every 2 inches (5 cm).
  • Step #20 Mix sugar & cinnamon & sprinkle on top.
  • Step #21 Coat with butter flavored cooking spray.
  • Step #22 If you use melted butter, put on before cinnamon/sugar.
  • Step #23 Bake 25-30 mins until puffed & brown.
  • Step #24 Allow to cool to about room temp then cut into 8 pieces.
  • Step #25 Can serve this with sugar free icecream or whipped cream.
