Abruzzi Shrimp Pasta Sauce Recipe

Ingredients
  • 1 c of sliced fresh flat-leaf Italian parsley (can also substitute with fresh basil if you like) .
  • 10 tbsps olive oil .
  • 2 lbs medium shrimp .
  • 2 (28 oz) cans crushed tomatoes or fresh plum tomatoes (enough to fill mixer 2 times) .
  • 10 whole garlic cloves .
  • 1 1/2 lbs pasta (linguine, or any thin spaghetti you may have on hand)

Directions
  • Step #1 If you plan on using fresh tomatoes, simply wash, take stem area off, & place this in mixer to puree.
  • Step #2 Place tomatoes, parsley in large pot & cook slowly for 30 mins, whole cloves of garlic, olive oil, stirring every 15 mins.
  • Step #3 If using fresh tomatoes, it will need extra cooking time of 15 mins.
  • Step #4 Garlic cloves should be very soft & sauce should have nice consistency- not watery.
  • Step #5 During last 15 mins add the shrimp.
  • Step #6 Spice up to taste with salt & some red pepper flakes if you like.
  • Step #7 Place water to boil in another large pot.
  • Step #8 when boiling add a tbsp of oil(prevents pasta from sticking).
  • Step #9 Place pasta in boiling water & stir, stir often.
  • Step #10 Put timer on for exactly 11 mins.
  • Step #11 Drain pasta, place this in large platter & mix together with sauce.
