Mexican Style Roasted Corn Recipe

Ingredients
  • 1/4 c mayonnaise (or to taste) .
  • 6 ears unshucked sweet corn on the cob .
  • salt .
  • 1/2 c fresh grated parmigiano-reggiano cheese .
  • 2 tbsps mild chili powder (or more to taste) .
  • 2 tbsps butter .
  • 1 large lemon, juice of .
  • 1 tbsp lemon pepper (or to taste)

Directions
  • Step #1 Roast unshucked ears of corn on med-high grill for 30+ mins (depending on your grill).
  • Step #2 Shuck the hot ears & cut off kernels into a large bowl.
  • Step #3 While corn is hot, butter, add chile powder, lemon juice, mayonnaise, lemon pepper, & parmesan cheese.
  • Step #4 Mix well & salt to taste.
