1 large garlic clove, minced (or more if you like)
Directions
Step #1 Preheat oven to 400F degrees.
Step #2 Trim off any fat or membranes from the chicken.
Step #3 Pound thicker ends lightly to flatten to an even thickness.
Step #4 Dredge the chicken in flour; shake off excess.
Step #5 In a large non reactive skillet, melt 4 Tbs butter over moderately high heat.
Step #6 Add chicken & saute, turning once, until golden brown, about 3 mins per side.
Step #7 Remove to plate.
Step #8 Keep warm.
Step #9 Reduce the heat to low & add the scallions,garlic, mushrooms & capers.
Step #10 Cook until softened, about 5 mins.
Step #11 Increase heat to moderately high, add wine & boil, until reduced by half, scraping up any browned bits, 2 to 3 mins ( If more liquid is needed add more white wine.
Step #12 ).
Step #13 Spread half the sauce in a buttered baking dish just large enough to hold the chicken in a single layer.
Step #14 Add chicken & season this with salt & pepper.
Step #15 Drizzle on the lime juice.
Step #16 Cover up with remaining sauce.
Step #17 Sprinkly on the lime zest, parsley & bread crumbs.
Step #18 Dot with remaining Tbs butter.
Step #19 Bake uncovered in the top third of the oven for 15 mins or until the juices run clear.
Step #20 Serve at once.
