Peasant Style Spaghetti Recipe

Ingredients

1/2 tsp fresh ground black pepper .
1/4 c Italian parsley, sliced .
1 tbsp extra virgin olive oil .
1/3 c asiago cheese, grated .
4 medium garlic cloves, minced .
12 oz thin spaghetti, cooked & drained .
1 tsp dried oregano .
1 lb roma tomatoes, sliced .
1/4 lb prosciutto, minced

Directions

Step #1 Saute the garlic & tomatoes with the olive oil in a 10 inch skillet over medium-high heat until tender, about 5 mins.
Step #2 Add the prosciutto, black pepper & oregano.
Step #3 Reduce heat & let simmer until ingredients are well mixed, about 3 mins.
Step #4 Remove from heat & add the parsley & Asiago cheese.
Step #5 In a large pasta bowl toss the sauce mixture with the cooked & drained spaghetti.
Step #6 Garnish with extra whole parsley sprigs.
