Special Shrimp Bake Recipe

Ingredients
  • 1/8 tsp pepper .
  • 1 tbsp salt, divided .
  • 2 tbsps butter or margarine .
  • 2 1/4 c cooked rice .
  • 1/4 c finely sliced onions .
  • 2 tbsps vegetable oil .
  • 3 quarts water .
  • 1 tbsp lemon juice .
  • 1/8 tsp ground mace .
  • 1 (10 3/4 oz) can condensed tomato soup, undiluted .
  • 1/8 tsp cayenne pepper .
  • 1 tsp salt, divided .
  • 1/2 c slivered almonds, toasted, divided .
  • 2 1/2 lbs uncooked medium shrimp, peeled & deveined .
  • 1 c whipped cream .
  • 1/4 c finely sliced green peppers

Directions
  • Step #1 In a Dutch oven, bring water & 1 tbsp salt to boil, add shripm & cook for 3 mins or until pink, drain.
  • Step #2 Sprinkle top shrimp with oil & lemon juice & set aside.
  • Step #3 In a skillet, saute green pepper & onion in butter for 5 mins or until tender.
  • Step #4 Add soup, cayenne, rice, mace, cream, pepper, 1/4 c of almonds & remaining salt.
  • Step #5 Set aside 1 c of shrimp.
  • Step #6 Add remaining shrimp to the rice mixture.
  • Step #7 Transfer to a greased 2 qt baking dish.
  • Step #8 Bake uncovered at 350 for 30-35 mins.
  • Step #9 Top with reserved shrimp & remaining almonds & bake 20 mins longer or until the shrimp are lightly browned.
