New Year's Day Good Luck Salad Recipe

Ingredients
  • 4 tbsps sherry wine vinegar .
  • 3/4 tsp salt .
  • 2 tbsps cider vinegar .
  • 3/4 c sliced red onions .
  • 3/4 c sliced celery .
  • 1 tsp Tabasco sauce .
  • 3/4 lb turkey kielbasa, sliced & lightly sauteed .
  • pepper .
  • Dressing .
  • 2 c cooked black-eyed peas, drained .
  • 1/4 c sliced fresh cilantro .
  • 1/2 c sliced radishes .
  • 1 lb yukon gold potatoes .
  • salt .
  • 1/2 c sliced red bell peppers .
  • 3/4 tsp pepper .
  • 1/3 c sugar .
  • 1/2 c sliced green bell peppers .
  • 1/2 c canola oil

Directions
  • Step #1 In a saucepan (big enough to accomodate the potatoes without crowding), add potatoes, water to cover, & 1 tsp salt per quart of water.
  • Step #2 Cover up partially & bring to a boil; cook about 20-25 mins or until the potatoes are tender when pierced.
  • Step #3 Drain the potatoes in a collander; return potatoes to the warm saucepan & toss them over low heat/flame to dry them.
  • Step #4 When cool enough to handle, peel & cut into 1/4-inch cubes.
  • Step #5 Put potatoe cubes In a large-ish bowl & sprinkle with the cider vinegar while still warm.
  • Step #6 To make the dressing: in a bowl, pepper, sugar, salt, vinegar, whisk the canola oil, & Tabasco until well mixed.
  • Step #7 To the potatoes add the black-eyed peas, bell peppers, celery, sausage, onion, & cilantro.
  • Step #8 Pour the dressing over all & mix carefully to coat thoroughly.
  • Step #9 Spice up with salt & pepper.
  • Step #10 Cover up & put in the fridge.
  • Step #11 May serve chilled or at about room temp.
  • Step #12 Right before serving, garnish with radish slices.
