Step #1 In a bowl, brown sugar, raisins, mix the apples, honey, cinnamon & nutmeg.
Step #2 Melt butter in a 12-inch ovenproof skillet.
Step #3 Add apple mixture to skillet; sauté for 15 mins or until tender.
Step #4 In a mixer, flour, milk, mix the eggs, sugar & salt; cover & process for 10 seconds or until smooth.
Step #5 Pour over apple mixture; carefully lift apple mixture, letting egg mixture flow underneath.
Step #6 Bake, uncovered, at 425°F for 15 to 20 mins or until pancake is puffy & golden brown.
Step #7 Sprinkle top with lemon juice & confectioners’ sugar if desired.
Step #8 Cut into wedges.
Step #9 Serve warm.
Step #10 Yield: 6 servings.
