Quickest Spanish Rice For Working Moms Recipe

Ingredients
  • 2 c instant rice .
  • chili powder .
  • 2 tbsps cooking oil .
  • 1/4 c frozen peas or carrots (optional but nice touch) .
  • 1/2 c of ready made salsa .
  • cumin .
  • 1 c chicken broth

Directions
  • Step #1 First, sautee the rice in the oil.
  • Step #2 Stir until rice starts to turn brown.
  • Step #3 Add in vegetables & cook for extra 3-4 mins.
  • Step #4 Stir in salsa, chicken broth, cumin to taste & chili powder to taste ( you can always add more later if necessary).
  • Step #5 Add chicken broth & let simmer until fluids cook down.
  • Step #6 Since this is done with "ready made" items from your kitchen, you can be pretty flexible.
  • Step #7 Use what you have.
  • Step #8 Example: use a can of tomatoes with green chile's, use powdered chicken bouillon & water, add or reduce the amount of spices.
