Rio Grande Pot Roast Recipe

Ingredients
  • 3 lbs boneless bottom round roast .
  • 1/3 c sliced fresh cilantro .
  • 6 oz tomato paste .
  • 1 1/2 c thick & chunky salsa .
  • 2 tbsps peanut butter .
  • 1/2 tsp pepper .
  • 1/2 tsp salt .
  • 1 1/4 oz taco seasoning .
  • 1 c beer (or water)

Directions
  • Step #1 Put salsa, beer, tomato paste & taco seasoning in crockpot.
  • Step #2 Stir to mix.
  • Step #3 Rub beef with salt & pepper; add to cooker & spoon som of the sauce mixture over it.
  • Step #4 Cover up & cook on low 8-10 hrs until beef is very tender when pierced.
  • Step #5 Remove to a cutting board.
  • Step #6 Stir peanut butter & cilantro into sauce.
  • Step #7 Slice meat across the grain; serve this with the sauce.
