Mushroom Stew Recipe

Ingredients
  • 2 tbsps tomato paste .
  • 8 oz bacon, finely sliced .
  • 3-4 tbsps flour .
  • 1 c red wine .
  • 1 tsp lemon zest, finely minced .
  • 4 oz bell peppers, assorted sliced .
  • 2 bay leaves .
  • 4 oz carrots, sliced .
  • 3 tbsps paprika .
  • 8 oz salt pork, finely sliced Soak in water overnight to get rid of some of the salt .
  • 4 oz celery, sliced .
  • 2 liters beef broth .
  • 3 garlic cloves, minced .
  • 3 lbs mushrooms, wild assorted (oyster mushrooms, shitaake, etc) .
  • 1 tsp caraway seeds, cracked (you can do it with the knife or the spicegrinder) .
  • 2 lbs mushrooms, domestic (your regular white mushrooms, cremini, etc) .
  • 4 oz leeks, sliced .
  • 5 lbs onions, sliced .
  • 1 tsp marjoram .
  • 2 tbsps oil

Directions
  • Step #1 Render the bacon & the salt pork.
  • Step #2 Add the sliced onions.
  • Step #3 Cook until onions are translucent.
  • Step #4 Add the other vegetables.
  • Step #5 Saute for a few moments.
  • Step #6 In the meantime heat the oil in a pan, then add the tomatopaste.
  • Step #7 Cook untill the tomatopaste turns brown.
  • Step #8 DO NOT LET THE PASTE BURN! Add the broth to the paste & let it come to a boil.
  • Step #9 In the meantime add the mushrooms (cut in bitesize chunks) to the vegetables.
  • Step #10 Add the paprika.
  • Step #11 You add it that late, because paprika burns easily & then becomes bitter.
  • Step #12 For a spicier flavor use hot kind.
  • Step #13 Saute for a few mins.
  • Step #14 Then add the brothmixture to the mushrooms.
  • Step #15 Bring to a boil, reduce to a slow simmer & let simmer for about one hr covered.
  • Step #16 In the last 30 mins add the red wine.
  • Step #17 Spice up with salt & pepper.
  • Step #18 Thicken the stew with the flour mixed with some water! Serve with noodles or rice or dumplings.
