Antoine's Oysters Bonne Femme Recipe

Ingredients
  • 3 tbsps flour .
  • 3/4 c green onions, sliced .
  • 2 tbsps mozzarella cheese, grated .
  • 3 dozen oysters (in their liquor) .
  • 2 tbsps swiss cheese, grated .
  • 3 tbsps butter, unsalted .
  • 2 tbsps romano cheese, grated .
  • 1 tsp salt .
  • 1/2 tsp white pepper .
  • 1/2 c dry white wine .
  • 1/3 c dry breadcrumbs, finely grated .
  • butter, for ramekins .
  • 1 c lump crabmeat .
  • 1 tbsp parsley, minced

Directions
  • Step #1 Put oysters & their liquor in a small saucepan & let simmer carefully about 10-12 mins.
  • Step #2 Keep oysters warm; strain off liquor & reserve.
  • Step #3 Preheat oven to 400°F.
  • Step #4 Butter either a one quart souffle dish or six 1/2 c ramekins.
  • Step #5 Melt the butter in a saute pan & stir in the flour.
  • Step #6 Cook flour & butter & butter together over med-heat/flame, stirring every once in awhile, until the mixture becomes foamy.
  • Step #7 Add the reserved oyster liquor, white wine, green onion, parsley, salt & pepper.
  • Step #8 Bring mixture to a boil then lower heat & let simmer for 15 mins.
  • Step #9 Fold in the oysters & crabmeat carefully.
  • Step #10 pour the mixture into the souffle dish or the individual ramekins.
  • Step #11 Combine the cheeses & breadcrumbs & sprinkle it over the oyster mixture.
  • Step #12 Bake for 20 mins (less if using the individual ramekins) or until cheese is melted & begins to brown.
  • Step #13 Remove from oven & serve as soon as possible.
