1 (10 3/4 oz) can condensed beef broth, undiluted (I use consome) .
1 tsp ground ginger .
1/4 c butter, melted .
1 lemon, halved .
GRAVY .
1 tsp salt .
4 lbs pork loin
Directions
Step #1 Wash & pare potatoes.
Step #2 Cut into slices, down through the top of each potato, 1/8 inch thick, being careful not to cut through to the bottom, leaving the bottom intact.
Step #3 Place in ice water to chill for about 1 hr, while you get everything else ready.
Step #4 Wipe the pork with damp paper towels; trim off excess fat.
Step #5 Preheat oven to 350*F.
Step #6 With a long narrow, sharp knife, starting at each end pierce through to center of roast.
Step #7 Using fingers, push fruit into the holes to completely fill.
Step #8 Rub roast on all sides with half a lemon.
Step #9 sprinkle with salt, pepper & ginger.
Step #10 Place fat side up, in shallow roasting pan without rack.
Step #11 Pork will rest on bones.
Step #12 Pour beef broth around.
Step #13 Cover up the pan with foil wrap or a tight fitting lid & roast, covered, for 30 mins.
Step #14 Remove from oven.
Step #15 Drain & dry potatoes.
Step #16 Melt butter with paprika.
Step #17 Roll dry potatoes in this twice, then place this in roasting pan around the roast.
Step #18 Pour remaining paprka butter over potatoes.
Step #19 Roast, uncovered, basting every half hr with pan drippings.
Step #20 (add water if needed).
Step #21 Roast 1 hr 20 mins, or until thermometer registers 175*F.
Step #22 Remove roast & potatoes to heated platter; keep warm in a low oven.
Step #23 Make a gravy by pouring pan drippings into a two c measure.
Step #24 Skim off fat, reserving 2 TBS.
Step #25 Put the 2 TBS fat into roasting pan.
Step #26 Stir in the flour & ginger until smooth.
Step #27 Cook stirring over low heat/flame to brown the flour slightly.
Step #28 Add water to the pan drippings to make 1 1/4 c & slowly stir in theto the flour mixture along with the milk; bring to boiling, stirring until thickened.
Step #29 Serve with the roasted pork & potatoes for a really special meal.
