Italian Style Veal Shanks Recipe

Ingredients
  • Gremolata .
  • 1 1/2 kg veal shanks, pieces .
  • 1/4 c olive oil .
  • 1 c continental fresh parsley leaves, sliced .
  • 2 slices lemon zest, finely sliced .
  • 1 bay leaf .
  • 1 liter beef stock (salt reduced) .
  • 1 tsp dried basil leaves .
  • 1 onion, sliced .
  • 425F g canned tomatoes, sliced .
  • 2-3 slices lemon zest .
  • 1 garlic clove, sliced .
  • 1 celery rib, sliced .
  • 1 garlic clove, sliced .
  • 1 tbsp butter .
  • 1/4 c plain flour .
  • 1 carrot, sliced

Directions
  • Step #1 Mix gremolata ingredients together & serve this with the cooked shanks.
  • Step #2 Preheat oven to 180 Degrees Celsius.
  • Step #3 Spice up shanks with salt & pepper.
  • Step #4 Dust flour shaking off excess.
  • Step #5 Heat oil in large frying pan & brown shanks.
  • Step #6 Transfer to ovenproof casserole.
  • Step #7 Wipe pan clean with paper towel & melt butter over low heat/flame.
  • Step #8 Cook vegetables stirring until onion is soft, then add all remaining ingredients.
  • Step #9 Bring to boil & let simmer 2 mins.
  • Step #10 Pour over shanks.
  • Step #11 Cover up bake for 1 1/2 hrs until meat is tender.
