Ingredients
Gremolata .
1 1/2 kg veal shanks, pieces .
1/4 c olive oil .
1 c continental fresh parsley leaves, sliced .
2 slices lemon zest, finely sliced .
1 bay leaf .
1 liter beef stock (salt reduced) .
1 tsp dried basil leaves .
1 onion, sliced .
425F g canned tomatoes, sliced .
2-3 slices lemon zest .
1 garlic clove, sliced .
1 celery rib, sliced .
1 garlic clove, sliced .
1 tbsp butter .
1/4 c plain flour .
1 carrot, sliced
Directions
Step #1 Mix gremolata ingredients together & serve this with the cooked shanks.
Step #2 Preheat oven to 180 Degrees Celsius.
Step #3 Spice up shanks with salt & pepper.
Step #4 Dust flour shaking off excess.
Step #5 Heat oil in large frying pan & brown shanks.
Step #6 Transfer to ovenproof casserole.
Step #7 Wipe pan clean with paper towel & melt butter over low heat/flame.
Step #8 Cook vegetables stirring until onion is soft, then add all remaining ingredients.
Step #9 Bring to boil & let simmer 2 mins.
Step #10 Pour over shanks.
Step #11 Cover up bake for 1 1/2 hrs until meat is tender.
