Roasted Red Capsicum Soup Recipe

Ingredients
  • 4 red capsicums .
  • 1/2 tsp sugar .
  • 2 tsps sumaq .
  • 1 red onion .
  • black pepper .
  • 1 kg roma tomatoes .
  • 1 liter vegetable stock .
  • 2 tsps panch phoron .
  • sea salt

Directions
  • Step #1 Cut capsicum in half & deseed.
  • Step #2 Place on baking tray.
  • Step #3 Halve tomatoes & sprinkle with all the seasonings & drizzle with olive oil.
  • Step #4 Cut onion into 8ths for roasting.
  • Step #5 Roast all the vegetables at 200 degrees C until capsicum skins are blackened, & the others are cooked.
  • Step #6 Peel skin off cpasicums when cool (you can place then when hot in plastic bags & seal to sweat so skin comes off easily).
  • Step #7 Process all the vegetables until smooth.
  • Step #8 Add vegetable stock & heat.
