Ingredients
4 red capsicums .
1/2 tsp sugar .
2 tsps sumaq .
1 red onion .
black pepper .
1 kg roma tomatoes .
1 liter vegetable stock .
2 tsps panch phoron .
sea salt
Directions
Step #1 Cut capsicum in half & deseed.
Step #2 Place on baking tray.
Step #3 Halve tomatoes & sprinkle with all the seasonings & drizzle with olive oil.
Step #4 Cut onion into 8ths for roasting.
Step #5 Roast all the vegetables at 200 degrees C until capsicum skins are blackened, & the others are cooked.
Step #6 Peel skin off cpasicums when cool (you can place then when hot in plastic bags & seal to sweat so skin comes off easily).
Step #7 Process all the vegetables until smooth.
Step #8 Add vegetable stock & heat.
