Lemon Cream Cheese Pie (light Version) Recipe

Ingredients
  • 48 reduced-fat vanilla wafers .
  • 1/2 c lemon juice .
  • 3 tbsps light margarine .
  • 8 oz fat free cream cheese .
  • 1 (14 oz) can fat-free condensed milk

Directions
  • Step #1 Line sides of a 9 inch pie pan with vanilla wafers & set aside.
  • Step #2 Crush remaining vanilla wafers.
  • Step #3 Melt butter.
  • Step #4 Mix butter & crushed vanilla wafers & press into the bottom of the pie pan.
  • Step #5 Cream the condensed milk & cream cheese together.
  • Step #6 Add lemon juice & mix until smooth.
  • Step #7 Pour in pie crust.
  • Step #8 Chill for 3 hrs.
  • Step #9 Maybe topped with whipped cream when served.
