Ingredients
1/8 tsp pepper, freshly ground .
2 tbsps mango chutney (or your favourite chutney) .
2 (6 oz) salmon fillets, 1 inch thick .
1 green onion .
1-2 tsp ground cumin .
1 tsp dark sesame oil (or olive oil) .
1/8 tsp salt
Directions
Step #1 Preheat oven to 450f degrees.
Step #2 Line a rimmed baking sheet with foil wrap; place salmon, skin side down, on foil wrap.
Step #3 Brush tops of fish with oil, sprinkle with cumin, salt & pepper, then rub into fillets; spoon chutney over top & spread to edges.
Step #4 Roast in centre of preheadted oven until knife tip inserted into thickest part of salmon comes out warm, about 12 to 15 mins.
Step #5 Chop green onion & sprinkle it over fish before serving.
