Ingredients
1/4 c mayonnaise or sour cream .
1/2 tsp salt (to taste) .
1/2 tsp black pepper (to taste) .
2 c cubed cooked lamb (preferably cooked rare) .
1/2 tsp dried rosemary or thyme .
3 fluid oz dry sherry .
2 (10 oz) packages frozen sliced spinach, thawed .
1/2 c crumbled feta cheese or goat cheese .
1/4 c butter, melted
Directions
Step #1 Preheat the oven to 350°F Grease a 1 1/2-quart casserole dish & set aside.
Step #2 Squeeze thawed spinach until almost dry.
Step #3 In a medium size bowl, mix all the ingredients except the cheese & mix until well mixed.
Step #4 Scrape into the prepared casserole dish & sprinkle the cheese evenly over the top.
Step #5 Bake until bubbly & slightly browned, about 30 mins.
