Lamb And Spinach Casserole Recipe

Ingredients
  • 1/4 c mayonnaise or sour cream .
  • 1/2 tsp salt (to taste) .
  • 1/2 tsp black pepper (to taste) .
  • 2 c cubed cooked lamb (preferably cooked rare) .
  • 1/2 tsp dried rosemary or thyme .
  • 3 fluid oz dry sherry .
  • 2 (10 oz) packages frozen sliced spinach, thawed .
  • 1/2 c crumbled feta cheese or goat cheese .
  • 1/4 c butter, melted

Directions
  • Step #1 Preheat the oven to 350°F Grease a 1 1/2-quart casserole dish & set aside.
  • Step #2 Squeeze thawed spinach until almost dry.
  • Step #3 In a medium size bowl, mix all the ingredients except the cheese & mix until well mixed.
  • Step #4 Scrape into the prepared casserole dish & sprinkle the cheese evenly over the top.
  • Step #5 Bake until bubbly & slightly browned, about 30 mins.
