Ingredients
12 fajita style tortillas .
1 lb fiesta style Mexican mix cheese .
3 (10 oz) cans enchilada sauce, the spicyness is up to you .
4-5 large boneless chicken breasts
Directions
Step #1 Preheat oven to 350°F.
Step #2 Grill the chicken breasts untill the outside is completely white.
Step #3 (if the outside is golden brown, then the chicken will be dry when done) After the chicken is done, cut the breasts into 1inx1in squares.
Step #4 *optional* You can also marinade the chicken in one of the cans of enchilada sauce.
Step #5 if you do, then save the sauce after the chicken marinades.
Step #6 Put about one handfull of chicken into a tortilla shell along with a little cheese.
Step #7 Roll the tortilla tightly & place this in a non-greased, glass, 9x13 pan.
Step #8 Repeat untill all the chicken & tortilla shells are in the pan.
Step #9 If you marinaded the chicken, put the remaining two cans of enchilada sauce & the one can you used to marinade on top of the tortilla shells.
Step #10 Make sure the sauce seeps into the sides & inbetween the shells.
Step #11 Otherwise, it'll all rest on top.
Step #12 The bottom will be too dry & clean up will be harder.
Step #13 When all three cans are evenlly throughout the shells, cover the top this with the rest of the cheese.
Step #14 (some people like a lot of cheese, other don't like a ot of cheese.
Step #15 The amount that goes on top os up to you.
Step #16 ).
Step #17 Lastly, put the enchiladas into the oven for 30min or untill all the cheese on top is melted.
Step #18 Let stand for about five min This is so the cheese hardens just a little & wont fall off when you serve.
