Black-eyed Pea Vinaigrette Recipe

Ingredients
  • 2 tbsps freeze- dried cilantro .
  • 1 tsp marjoram .
  • 1 (16 oz) package dried black-eyed peas (or 2 10-oz bags frozen) .
  • 3 tbsps sliced fresh parsley .
  • 1 large onion, sliced .
  • 1 tsp fresh ground pepper .
  • 8 c water .
  • 1/4 c red wine vinegar .
  • 3 bay leaves .
  • 2 tsps ground cumin .
  • 2 tsps salt .
  • 2 garlic cloves, minced .
  • 2 tbsps vegetable oil .
  • 1/2 c vegetable oil, plus

Directions
  • Step #1 Sort & wash peas; place this In a large-ish Dutch oven.
  • Step #2 Add water, onion, salt, bay leaves, cumin, garlic, & marjoram; bring to a boil.
  • Step #3 Cover up, reduce heat, & let simmer 40--45 mins or unitl peas are tender.
  • Step #4 Drain & let cool.
  • Step #5 Remove bay leaves.
  • Step #6 Add remaining ingredeitns to peas; toss well.
  • Step #7 Serve at about room temp.
