Lemon Grass Chicken Recipe

Ingredients
  • 2 stalks lemongrass, long or 4 short stems .
  • 1 carrot, finely sliced .
  • 1 tbsp sunflower oil .
  • 1 egg white, small .
  • lime slices, garnish .
  • 2 chicken breasts, skinless & boneless about 14 oz total weight .
  • 1 chile, red, small, deseeded, & sliced .
  • 2 tbsps cilantro, fresh & sliced .
  • salt, to taste .
  • pepper, to taste .
  • 2 tbsps garlic chives, fresh & sliced .
  • cilantro, garnish

Directions
  • Step #1 If using the long lemon grass stems, cut in half across the middle to make four short stems for a total of eight stems.
  • Step #2 Coarsely chop chicken in a food processor/blender & add egg white.
  • Step #3 Process to make a smooth paste.
  • Step #4 Add carrot, chives, chile, cilantro, salt & pepper & process to mix.
  • Step #5 Place mixture in refrigerator to chill, about 15 mins.
  • Step #6 When chilled, divide mixture into eight equal portions.
  • Step #7 Using your hands, shape the portions around the lemon grass stems.
  • Step #8 The lemon grass stem will be the "skewer" for the chicken mixture.
  • Step #9 Preheat broiler to medium hot, brush skewers with oil & broil approximately 4-6 mins.
  • Step #10 Turn them every once in awhile until golden brown & cooked through.
  • Step #11 These skewers can also be grilled over medium hot coals.
  • Step #12 Garnish with cilantro & slices of lemon (optional) & serve as soon as possible.
