Linguine With Clam Sauce And Vegatbles Recipe

Ingredients
  • Pasta .
  • 2 dozen cherrystone clams or 1 dozen quahog clams .
  • 1 medium zucchini .
  • 1 tbsp peanut oil .
  • 1/4 tsp salt .
  • Clam Sauce .
  • Vegetables .
  • 1/8 tsp ground black pepper .
  • 1 lb pasta .
  • 1/8 tbsp unsalted butter .
  • 6-7 white mushrooms .
  • parmesan cheese .
  • Garnish .
  • 2 tsps fresh oregano .
  • 8 garlic cloves .
  • 1 large tomato .
  • 1/2 c dry white wine .
  • 1 medium onion .
  • 1/4 tsp salt .
  • 8-10 asparagus spears .
  • 1 tbsp unsalted butter .
  • 2 tbsps olive oil .
  • 1/2 tsp black pepper .
  • 2 tbsps olive oil .
  • 1/4 tsp pepper .
  • 1 tsp salt

Directions
  • Step #1 Shuck clams reserving the liquid.
  • Step #2 Remove the meat from clams & add to the liquid.
  • Step #3 Stir to remove sand & lift clams one at a time.
  • Step #4 Cut in half using scissors.
  • Step #5 Place in clean bowl.
  • Step #6 Let clam liquid rest then pour over the piece leaving behind the residue.
  • Step #7 Vegetables:.
  • Step #8 Heat oil & butter in skillet.
  • Step #9 Add all vegetables except tomato.
  • Step #10 Add salt & pepper.
  • Step #11 Saute over high heat for 2 mins.
  • Step #12 Add tomato & toss lightly.
  • Step #13 Clam Sauce:.
  • Step #14 In a large skillet, heat olive oil & butter.
  • Step #15 Add onion & saute for 3 mins.
  • Step #16 Add oregano & garlic.
  • Step #17 Cook for 30 seconds.
  • Step #18 Stir in juice of clams & wine.
  • Step #19 Boil carefully for 7-8 minuts uncovered.
  • Step #20 Add clams & pepper allow to boil then set aside.
  • Step #21 Pasta:.
  • Step #22 Add tsp salt to boiling water.
  • Step #23 Add pasta & cook al dante.
  • Step #24 Scoop out 6oz of pasta liquid & add to clams.
  • Step #25 Drain pasta & transfer to bowl.
  • Step #26 Add oil, salt, pepper & 1 c juice from clam sauce.
  • Step #27 Mix well.
  • Step #28 To serve:.
  • Step #29 Arrange pasta on large serving dish.
  • Step #30 Spoon on clam sauce.
  • Step #31 Then arrange vegetables on top & garnish with parmesan cheese.
  • Step #32 Serve as soon as possible.
