Grilled Shrimp With Portabellas Recipe

Ingredients
  • 1/8 tsp pepper .
  • 2 tbsps lemon juice .
  • 1/2 c basil leaves, sliced (or 1 tbsp dried basil) .
  • 4 portabella mushroom caps (1 lb) .
  • 5 tbsps olive oil, divided .
  • 1/4 tsp salt .
  • 1/2 c grape tomatoes or cherry tomatoes, halved .
  • 1 lb large shrimp, shelled & deveined

Directions
  • Step #1 Soak wooden skewers in water for at least 30 mins.
  • Step #2 Prepare grill or preheat broiler.
  • Step #3 Thread shrimp onto skewers.
  • Step #4 Brush shrimp & porabellas with 2 tbsps olive oil.
  • Step #5 In a small bowl whisk together the remaining oil (3 tbsps) with lemon juice, salt & pepper.
  • Step #6 Add tomatoes & basil to dressing & set aside.
  • Step #7 Place portabellas & shrimp onto grill (or on broiler rack) & grill until shrimp is cooked, turning once ( 3-5 mins).
  • Step #8 Remove shrimp from skewers & add to dressing.
  • Step #9 Continue cooking prtabells until softened (3-5 mins longer).
  • Step #10 Place portabellas, smooth side down, on serving plates (or platter) & spoon shrimp/tomato mixture onto caps.
  • Step #11 Garnish wiht basil, if desired.
