Ingredients
7 oz cooleeney cheese (200 gram round) .
Tabasco sauce (optional) .
1/2 c butter .
1 c dry white wine .
4 oz finely sliced almonds
Directions
Step #1 Put Cooleeney & wine in a bowl or plastic container.
Step #2 Cover up & leave for 24 hrs.
Step #3 The next day, drain off the wine.
Step #4 Combine the Cooleeney, & a dash of Tabasco sauce in the bowl of a food processor/blender & process 20 to 30 seconds, butter, until smooth.
Step #5 Refrigerate for 5 mins.
Step #6 Form the cheese mixture into a ball & smooth.
Step #7 Flatten to resemble its original shape.
Step #8 Toast the almonds under the broiler until golden brown.
Step #9 Roll the top & sides of the cheese into the almonds, patting them onto the cheese with your hands.
Step #10 Refrigerate until firm.
Step #11 Remove cheese from refrigerator at least 30 mins before serving.
Step #12 Serve with cracker or biscuits.
