Wine Cooleeney Recipe

Ingredients
  • 7 oz cooleeney cheese (200 gram round) .
  • Tabasco sauce (optional) .
  • 1/2 c butter .
  • 1 c dry white wine .
  • 4 oz finely sliced almonds

Directions
  • Step #1 Put Cooleeney & wine in a bowl or plastic container.
  • Step #2 Cover up & leave for 24 hrs.
  • Step #3 The next day, drain off the wine.
  • Step #4 Combine the Cooleeney, & a dash of Tabasco sauce in the bowl of a food processor/blender & process 20 to 30 seconds, butter, until smooth.
  • Step #5 Refrigerate for 5 mins.
  • Step #6 Form the cheese mixture into a ball & smooth.
  • Step #7 Flatten to resemble its original shape.
  • Step #8 Toast the almonds under the broiler until golden brown.
  • Step #9 Roll the top & sides of the cheese into the almonds, patting them onto the cheese with your hands.
  • Step #10 Refrigerate until firm.
  • Step #11 Remove cheese from refrigerator at least 30 mins before serving.
  • Step #12 Serve with cracker or biscuits.
