Almond Citrus Tart Recipe

Ingredients
  • 2 tbsps icing sugar .
  • 2 egg yolks .
  • Pastry .
  • 125 g butter (softened) .
  • Filling .
  • 1/2 c blanched almonds (finely sliced) .
  • 1 tsp lemon zest .
  • 1/3 c caster sugar .
  • 3 eggs (well beaten) .
  • 3 tbsps sliced almonds .
  • 350 g fresh ricotta (sieved) .
  • 1/4 c caster sugar .
  • 1 tbsp lemon zest .
  • 2 c plain flour (sifted)

Directions
  • Step #1 Pastry:.
  • Step #2 Combine the flour, sugar & a pinch of salt In a large-ish bowl.
  • Step #3 Make a well in the centre & add the butter, zest & egg yolks.
  • Step #4 Work the flour into the ingredients until a smooth dough forms.
  • Step #5 Wrap in plastic & chill for 1 hr.
  • Step #6 Filling:.
  • Step #7 Beat the ricotta & sugar with electric beaters.
  • Step #8 Gradually add the eggs, beating well after each addition.
  • Step #9 Stir in the zest & the sliced almonds.
  • Step #10 Preheat oven to 180C(350F).
  • Step #11 Brush a 20cm fluted flan tin with melted butter.
  • Step #12 Roll out the pastry on a lightly floured surface.
  • Step #13 Line the prepared tin with pastry.
  • Step #14 Trim the top of the pastry by rolling over the flan tin with a rolling pin.
  • Step #15 Pour the prepared filling in & smooth the top.
  • Step #16 Sprinkle top with the flaked almonds & bake for 55 mins or until golden & set.
  • Step #17 Cool to about room temp.
  • Step #18 Remove from tin & dust the top this with icing sugar.
  • Step #19 Serve chilled or room temperature.
