1 1/2 c finely crushed Chicken In A Biscuit crackers .
1/2 c mayonnaise, I use Helman's
Directions
Step #1 I used 4 thick cut pork loin chops, the pkg.
Step #2 weighed 1.
Step #3 86 lbs.
Step #4 to give you an idea.
Step #5 In small bowl, mix mayo & mustard, set aside.
Step #6 Crush crackers finely, & place this in pie dish, set aside.
Step #7 Pat chops dry with paper towel.
Step #8 Totally coat with mustard-mayo mix.
Step #9 Edges, too.
Step #10 Coat chops in crushed crackers WELL.
Step #11 Pat them on.
Step #12 Don't forget the edges.
Step #13 Place on a plate as you go.
Step #14 Use all the crumbs, sprinkling any leftover ones on top, pressing on.
Step #15 Heat a sufficient sized frying pan with oil that coats the bottom plus a bit more, with the butter.
Step #16 I like the oil to be able to come half way up the chops after they are in the pan.
Step #17 Place chops in hot oil that is heated over med-heat/flame.
Step #18 Fry for about 8-9 mins per side til golden brown, only turning once.
Step #19 Mine usually take 8 mins per side, but these must have been extra thick & took 9 mins per side.
Step #20 Only one min either way won't hurt them.
Step #21 If you've accidently heated your oil too hot & they've browned too quickly, don't fret, you can always "finish them off" in a 375º oven on a rack placed over a cookie sheet.
