Southern Comfort Jambalaya Recipe

Ingredients
  • 1 c sliced red bell peppers .
  • 1 1/2 tsps thyme .
  • 3/4 tsp black pepper .
  • 3 garlic cloves, minced .
  • 3/4 tsp salt .
  • 1 1/2 c sliced scallions .
  • 1 3/4 c converted rice or long-grain white rice .
  • 1 (14 1/2 oz) can no-salt-added whole tomatoes, with liquid .
  • 1 lb smoked sausage, sliced .
  • 1 c sliced green bell peppers .
  • 3/4 c Southern Comfort .
  • 1 tsp hot pepper sauce .
  • 2 tbsps worcestershire sauce .
  • 1 1/2 c sliced red onions .
  • 1 c sliced celery .
  • 3/4 lb boneless chicken .
  • 1/4 c safflower oil or canola oil .
  • 1 tsp oregano .
  • 3/4 lb shrimp, peeled & deveined .
  • 1 (15 3/4 oz) fat-free low-sodium chicken broth or 2 c low-sodium chicken bouillon .
  • 1 c sliced yellow bell peppers

Directions
  • Step #1 In large pot, sauté sausage in oil until lightly browned.
  • Step #2 Remove sausage from pot & sauté chicken until cooked.
  • Step #3 Remove chicken & sauté bell peppers through garlic until tender.
  • Step #4 Add tomatoes (with liquid) through hot pepper sauce & cook 5 mins.
  • Step #5 Stir in rice.
  • Step #6 Add chicken stock through worcestershire sauce; bring to a boil, then reduce to a simmer & add sausage,chicken & shrimp.
  • Step #7 Cook uncovered, stirring every once in awhile, 30-45 min until rice is done & shrimp is cooked.
  • Step #8 (If extra liquid is needed before rice is done, add a 50/50 mixture of water & Southern Comfort).
