Gourmet Grilled Cheese Sandwich Milan Style Recipe

Ingredients
  • 2 1/2-3 1/3 c shredded fontina (or cheddar or Monterey Jack cheese) .
  • 4 tbsps sliced cilantro (or green onion or parsley) .
  • 4 fresh garlic cloves, sliced (more or less to taste) .
  • 1 (14 oz) jar roasted red peppers, strips .
  • 3-4 tbsps extra virgin olive oil .
  • 8 slices french style fresh baked bread (thinly sliced) .
  • 1/2 (14 oz) jar pimento stuffed olives, Sliced

Directions
  • Step #1 Mix the sliced olives & sliced roasted red peppers in a bowl with garlic & cilantro or green onion.
  • Step #2 Sprinkle top 4 slices of bread with half of the cheese & then top this with the pepper-olive mixture.
  • Step #3 Apply the remaining cheese as another layer.
  • Step #4 Top with a second piece of bread & press together.
  • Step #5 Heat the olive oil In a large-ish skillet & carefully brown the sandwiches, turning once or twice as the cheese melts & holds the bread together.
  • Step #6 Some of the cheese will ooze out & crisp in the skillet, which is delicious, even if it burns slightly.
  • Step #7 Serve hot, on a paper napkin lined plate to absorb the excess cooking fat.
