Kansas City Steak Soup Recipe

Ingredients
  • 1/2 c sliced celery .
  • 1/2 c sliced onions .
  • 1/4 c flour .
  • 3-4 garlic cloves, sliced .
  • 3 tbsps butter .
  • 1/4 tsp pepper, freshly ground .
  • 1 lb New York strip steaks, cut into 1/2-inch pieces (or rib eye steak) .
  • 3 (14 1/2 oz) cans sliced tomatoes, undrained .
  • 1/2 c sliced carrots .
  • 1/2 tsp dried thyme .
  • 1/2 c dry red wine (optional) .
  • 1 tbsp olive oil .
  • 14 oz.can beef broth

Directions
  • Step #1 Heat the oil In a large-ish pot over medium high heat until it's hot.
  • Step #2 Add the beef; sprinkle with pepper.
  • Step #3 Cook 1 min or just until the edges begin to brown.
  • Step #4 Remove from the pot; place on a plate.
  • Step #5 In the same large pot, melt butter over med-heat/flame.
  • Step #6 Add the celery, carrots, onions & garlic; cook 2 mins.
  • Step #7 Add flour; cook 3 mins, stirring to scrape up the brown bits from the bottom of theh pot.
  • Step #8 Stir in tomatoes, broth, wine & thyme.
  • Step #9 Bring to a boil.
  • Step #10 Reduce the heat to medium; simmer 12 to 15 mins or until the veggies are tender.
  • Step #11 Stir beef & drippings into soup.
  • Step #12 Cook 2 mins for medium rare or until done to your liking.
