Rebollita ( Italian Cabbage Soup) Recipe

Ingredients
  • 1 (10 oz) package coleslaw mix .
  • 4 slices bacon .
  • 1/2 c celery, sliced .
  • 2 tbsps chili sauce or tomato paste .
  • 2-3 drops Tabasco sauce .
  • 4-6 c chicken broth (more for thinner soup preference) .
  • 1 c onions, sliced .
  • 1 c cooked ham, sliced .
  • 4-6 slices Italian bread, 1/2 thick .
  • 1 (10 1/2 oz) can white beans, drained .
  • 4 tbsps garlic, minced .
  • 2 large tomatoes, sliced .
  • 1 tsp fresh thyme, sliced .
  • black pepper

Directions
  • Step #1 Chop bacon into ½” pieces & sauté until almost done.
  • Step #2 Add onions, garlic, & celery; cook to soften, about 8 mins.
  • Step #3 Add all to crock pot.
  • Step #4 Add remaining ingredients & cook on LOW for 6-8 hrs.
  • Step #5 Cool & put in the fridge overnight for best flavor.
  • Step #6 To serve: Reheat; & place slices of bread in bottom of soup bowls & ladle hot Ribollita over bread.
