Chocolate Peanut Butter Piei Recipe

Ingredients
  • 1/3 c peanut butter
  • 1/4 tsp salt
  • 2/3 c confectioners' sugar
  • 4 egg yolks
  • 1/4 c unsweetened cocoa powder
  • 1 (9 inch) pie crust, baked
  • 1/3 c cornstarch
  • 2 c milk
  • 1 tbsp butter
  • 1 c white sugar

Directions
  • Step #1 In a medium saucepan, mix milk, butter, & salt.
  • Step #2 Place over low heat/flame & bring to a simmer.
  • Step #3 In a medium bowl, cocoa powder, white sugar, beat together egg yolks, & cornstarch.
  • Step #4 Slowly whisk 1/2 c of hot milk mixture into egg yolk mixture, mixing well.
  • Step #5 Gradually add egg yolk mixture to remaining milk mixture, whisking constantly.
  • Step #6 Return to heat & allow to boil 2 mins, stirring constantly.
  • Step #7 Remove from heat & allow this to cool.
  • Step #8 In a small bowl mix together confectioners' sugar & peanut butter until thoroughly mixd.
  • Step #9 Crumble mixture into pastry shell.
  • Step #10 Pour cooled chocolate mixture over peanut butter crumbles.
  • Step #11 Chill 2 hrs before serving.
