Clams With Garlic And Almonds Tapas Recipe

Ingredients
  • 2 lemons, juice & zest of .
  • 5 garlic cloves, thinly sliced .
  • 2 c dry white wine, such as cava (Spanish wine) .
  • 4 tbsps extra-virgin olive oil .
  • 1 tbsp blanched sliced almonds .
  • 1 lb littleneck clams or manila clams .
  • 4 scallions, thinly sliced .
  • 1 bunch parsley, finely sliced

Directions
  • Step #1 Scrub & drain cockles & set aside.
  • Step #2 In a 12-inch to 14-inch saute pan, heat oil until smoking.
  • Step #3 Add garlic & almonds & saute until golden brown.
  • Step #4 Add clams, wine & lemon juice & zest & bring to a boil.
  • Step #5 Cover up & cook this until clams open, about 3 to 4 mins.
  • Step #6 Uncover, add scallions & parsley & serve.
