Bacon, Zucchini, And Cornbread Bake Recipe

Ingredients
  • 1/2 green bell pepper, sliced .
  • 1 c milk .
  • 1/2 c shredded cheddar cheese .
  • 1 (6 oz) package cornbread stuffing mix (Stove Top) .
  • 1/2 red bell pepper, sliced .
  • 1 medium onion, sliced .
  • 3 celery ribs, sliced .
  • 3 large zucchini, shredded .
  • 2 garlic cloves, minced .
  • 1 large egg, beaten .
  • 6 slices bacon

Directions
  • Step #1 Fry bacon In a large-ish skillet over med-heat/flame until crisp; transfer bacon to a paper towel lined plate to drain; crumble bacon & set aside.
  • Step #2 Discard all but 2 tsps bacon drippings from skillet.
  • Step #3 Saute onion & next 4 ingredients in bacon drippings over medium-high heat until tender.
  • Step #4 In a large bowl, stir this together stuffing mix, seasoning packet, amd milk; let this stand for 10 mins.
  • Step #5 Stir bacon, zucchini, sauteed vegetables, & egg into cornbread mixture until well mixd.
  • Step #6 Transfer mixture to a lightly greased 11x7 8inch baking dish.
  • Step #7 Bake in a 350 degree oven for 30 mins; sprinkle cheese evenly over the top.
  • Step #8 Cover up & bake for 20 more mins.
