Step #1 Fry bacon In a large-ish skillet over med-heat/flame until crisp; transfer bacon to a paper towel lined plate to drain; crumble bacon & set aside.
Step #2 Discard all but 2 tsps bacon drippings from skillet.
Step #3 Saute onion & next 4 ingredients in bacon drippings over medium-high heat until tender.
Step #4 In a large bowl, stir this together stuffing mix, seasoning packet, amd milk; let this stand for 10 mins.
Step #5 Stir bacon, zucchini, sauteed vegetables, & egg into cornbread mixture until well mixd.
Step #6 Transfer mixture to a lightly greased 11x7 8inch baking dish.
Step #7 Bake in a 350 degree oven for 30 mins; sprinkle cheese evenly over the top.
Step #8 Cover up & bake for 20 more mins.
