Curried Indian Shrimp Recipe

Ingredients
  • 1 1/2 tsps ground coriander .
  • 1 1/2 tbsps lemon juice .
  • 1 1/2 tsps garam masala .
  • for the shrimp .
  • 1/2 c sliced green onions .
  • 1 1/2 tsps curry powder .
  • 2 tbsps vegetable oil .
  • 2 tbsps vegetable oil .
  • 2 lbs raw large shrimp, peeled, deveined .
  • 1 (28 oz) can sliced tomatoes with juice .
  • 2 c sliced onions .
  • 1/2 c sliced cilantro .
  • 1 (14 oz) can unsweetened coconut milk .
  • 4 large garlic cloves, minced .
  • 1 tsp turmeric .
  • 1 c plain yogurt .
  • 1/2 tsp cayenne pepper

Directions
  • Step #1 Heat 2 tbsps oil in a nonstick skillet over med heat & saute the onions until golden.
  • Step #2 add garlic & all the spices & cook for 1 min Cool until warm.
  • Step #3 Puree tomatoes & their juices with the yoghurt until smooth.
  • Step #4 Add onion mix & puree to almost smooth, season this with salt & pepper.
  • Step #5 This can be made one day in advance.
  • Step #6 Cover up & put in the fridge.
  • Step #7 Heat the remaining oil in a heavy ,deep skillet over med/high heat & saute the shrimp for 2 mins.
  • Step #8 Stir in the coconut milk, cilantro, green onions, lemon juice & prepared tomato sauce.
  • Step #9 Simmer for a furthur 4 mins , until shrimp are pink in the middle.
  • Step #10 Serve with basmati rice.
