Omelet à La Ciboulette Recipe

Ingredients
  • 3 tbsps grated gruyere .
  • 2 large eggs .
  • 1 tbsp sliced fresh chives .
  • 1 slice Canadian bacon, cut into thin strips .
  • 1/2 tsp olive oil .
  • salt & freshly ground black pepper .
  • 2 tsps unsalted butter .
  • 1 tbsp milk

Directions
  • Step #1 Heat the olive oil over med-heat/flame.
  • Step #2 Saute the bacon until lightly browned; set aside.
  • Step #3 Whisk the eggs with chives, milk & a few pinches of salt & pepper to taste.
  • Step #4 Note: You can substitute water for the milk.
  • Step #5 Melt the butter in an 8" skillet over medium high heat.
  • Step #6 When the butter has stopped foaming swirl it to coat the bootom of the pan & add the egg mixture.
  • Step #7 Lightly scramble the eggs using small circular motions.
  • Step #8 You may use the back of a fork, keeping it flat on the bottom of the pan.
  • Step #9 As the egg mixture firms, hold some back from the side of the pan & tilt the pan to spread the eggs over the bottom.
  • Step #10 Scatter the Gruyère over the omelett being sure to leave a margin around the edges & add the bacon.
  • Step #11 Lift 1/3 of the omelett & fold it over the center using a spatuala.
  • Step #12 Tilt the pan toward the plat2 so that 1/3 of the omelette hangs over the edge.
  • Step #13 Invert the pan, using the spatula for support so that it flips neatly over onto itself out of the pan onto the plate.
  • Step #14 Garnish with more chives & serve immeadiately.
