2-3 tbsps sun-dried tomatoes, sliced, for garnish .
1/4 c pine nuts .
1/3 c water .
1/2 c tomatoes, sun dried
Directions
Step #1 NOTE: If your dried tomatoes are very dry, soak in water for about 1/2 hr or 'til tender.
Step #2 Drain, reserving 1/3 c of the water for the recipe.
Step #3 NOTE: If your tomatoes are stored in olive oil, drain, reserving 2 tbsps of the oil for the recipe, then rinse tomatoes for 2 seconds & let drain.
Step #4 In a food processor/blender bowl, mix all ingredients except oil & water.
Step #5 Process until well mixed but not paste.
Step #6 Slowly add the oil in a stream while the processor is running.
Step #7 Add the water & mix until of desired consistency.
Step #8 Long mixing will produce a thicker sauce.
Step #9 If it's too thick, add more water (not oil) until of desired consistancy.
Step #10 One tbsp equals one serving on an average-size bowl of pasta.
