Japanese Cutlets And Curry Recipe

Ingredients
  • 2 garlic cloves, SLICED & toasted till golden brown, don't burn .
  • 1 (8 1/2 oz) package s&b curry roux (this will be in the golden or black box that says S&B Golden Curry Sauce Mix, in your asian aisle.) .
  • 2 c flour .
  • 1 egg, beaten .
  • oil, for frying .
  • salt & pepper, to taste .
  • 2 c mozzarella cheese, shredded (use the cheap brick cheese in the cheese aisle & cube, Not pre-shedded, NOT the fresh balls) .
  • 4 chicken breasts (or pork cutlets or medalions, whatever you prefer) .
  • rice, to serve this with .
  • 3 c panko (really use this not bread crumbs, makes all the difference)

Directions
  • Step #1 Wash chicken breasts.
  • Step #2 Pat dry with paper towel & then lb each flat between sheets of wax paper with a meat mallet, or whatever you use.
  • Step #3 Toast your garlic before you start anything else.
  • Step #4 I usually just put it in a dry skillet over med heat till a little crispy.
  • Step #5 But it can be done in the oven, jsut don't let it burn.
  • Step #6 this is just to put on top of the finished dish, if you don't like garlic skip this step.
  • Step #7 Pour oil in a frying pan until will cover chicken.
  • Step #8 Heat over med-high heat.
  • Step #9 One at a time, then roll in panko crumbs (seasoned with salt & pepper, dip chicken breasts in flour (seasoned with salt & pepper), then in egg (if run out just crack open another & beat it), if desired.
  • Step #10 ).
  • Step #11 Fry the chicken till golden & juices run clear.
  • Step #12 Depending on your stove 10-15 min.
  • Step #13 while chicken's frying take your blocks of curry roux & put all of them, yes all, into a big pot.
  • Step #14 Heat over med-high heat.
  • Step #15 Add 6-8 c of water.
  • Step #16 Add 6 at first, then if too thick looking add more water till consistency you want.
  • Step #17 i like mine not thick but not too runny, usually have to add about 7 or 8 c of water.
  • Step #18 I also like to add a couple dashes of curry powder, i use S&B, to give it an extra kick! Have some cooked rice ready.
  • Step #19 Put a chicken breast, may want to pre-cut it beforehand, on bed of rice then pour curry sauce over.
  • Step #20 Use a bowl for each serving! Put garlic & cheese on top, if desired.
  • Step #21 Cheese will melt & taste very yummy all mixed up in it.
